Here is a delicious, summery dessert that is so simple even your kids could make it (although if they are young, they will need help with the oven and the knife).
2 large grapefruit (ruby red is the best)
1/2 cup brown sugar
2 Tbsp. butter, melted
1 tsp. cinnamon
Cut each of the grapefruit in half. Place cut side up in a shallow baking dish or pie pan. (If the ends are really round, you may want to cut off a small section of the end to let them sit flat.) Using a serrated knife, slice between each of the sections of the grapefruit. Basically, you are making little “tunnels” for the sauce to drip down into the fruit.
In a small bowl, combine the brown sugar, butter, and cinnamon. Spread generously over the cut sides of the grapefruit.
Place the baking dish under the broiler, about 4 inches from the heat source. Broil for 5-7 minutes, or until the sugar is bubbly and starting to get crispy . Remove from the oven and allow to cool for 5 minutes before eating. Serve in bowls (vanilla ice cream or whipped cream goes great with this). Use grapefruit spoons to scoop out the fruit and juices. If you don’t have a grapefruit spoon, you can use a fork and spoon like we did.
