Weekly Menu

Well hello there! I’m returning to the blogosphere this week. Did ya miss me? I certainly did miss blogging, although I know the break was needed and healthy. I’ve got some fun things lined up for this month and I’m looking forward to sharing them with you. For today, though, I thought I’d just give you a glimpse of our menu from last week. It was our first week of homeschool and Naomi’s second week of middle school (?!?!?), so the emphasis was on quick and simple.

Breakfasts:

Cereal

Zucchini Bread

Toast, eggs, yogurt

 

Lunches:

PBJ, pears, chips

Macaroni and cheese, carrots and cucumbers

Bean and cheese burritos, blueberries

Grilled cheese, salad

Snacks: (This is where we got creative! Our first unit in Kindergarten is “Space” so we had several space-themed snacks. :) )

Dinners:

Spaghetti, cheesy breadsticks, salad

Herb Crusted Pork Roast with Veggies (although I did it in the crock pot this time, instead of the oven), wild rice

Crockpot Chicken Tortilla Soup, chips

BBQ chicken in the crock pot, corn bread, green beans

Baked macaroni and cheese, green beans

Brats, watermelon, chips and salsa

Surf & Turf Kabobs with garden produce and Garlic Naan (This was our big weekend meal to celebrate surviving the week!)

Weekly Menu

As with most families, we spent a lot of last week bar-b-queing. Here’s what we ate:

 

Breakfasts:

Cereal

Peanut Butter Chocolate Chip Pancakes (a huge hit on a new recipe!)

Eggs, sausage, toast, and peaches

Toaster waffles, strawberries

Oatmeal, raspberries

 

Lunches:

Hotdogs, chips, watermelon

Nachos, cucumber slices

PBJ, watermelon, Cheetos, ice cream sandwiches

Out to eat

Grilled chicken, grilled corn on the cob, cantaloupe

Turkey sandwiches, chips, peaches, cookies

Chicken Avocado Melts, chips, fruit

 

Dinners:

BBQ-ed Italian Chicken, rice, pineapple, salad

Hamburgers and hot dogs, baked beans, chips, salad

Rotisserie chicken, French bread, Salad

Leftovers

Grilled pizza, salad

Weekly Menu

It was SUPER hot last week, so we kept cooking and baking inside to a minimum. Here’s what we ate:

 

Breakfasts:

Lunches:

  • Hotdogs, blueberries, tortilla chips

  • PBJ, watermelon

  • Macaroni and cheese, cucumber slices, popsicles

  • Leftovers

  • Chicken noodle soup, saltine crackers, bananas (brought over by my kind and caring neighbor, when she heard we were all sick)

Snacks:

  • Popsicles

  • Cherries

  • Tortillas

  • Peanuts

  • Strawberry Banana Smoothies

 

Dinners:

  • Spaghetti, French bread (I bought some instead of making it like I usually do), Salad with Spinach from the garden

  • Sticky Ribs, cornbread, watermelon, salad, brownies and cupcakes (had dinner with friends!)

  • Chili Lime Chicken Tacos with Black Beans (in the crock pot), green beans, ice cream bars

  • Loaded baked potatoes, salad, Starbucks :)

  • Fajitas (on the grill), corn, grapes

  • Lemon pepper chicken (in the crock pot), leftover cornbread, salad

Weekly Menu

 

We had a wonderful, much needed family camping trip last week. I genuinely love cooking while we camp. My kids say that everything seems to taste better when you’re camping, and I think I agree. :) So, here’s what we ate during the camping trip, as well as the last few days of the week at home:

 

Breakfasts:

Toaster waffles and mixed berries

Cereal

Banana bread

Toast, eggs, sausage, and the last of our Puerto Rican coffee (Brian had a bout of insomnia and used it to make this smashing breakfast for all of us!)

Pancakes

 

Lunches:

PBJ, carrots and cucumbers

Grilled cheese, black berries

Leftovers

Nachos, carrot… chunks (Will made lunch – Yay!)

Brats, chips, watermelon

 

Snacks:

Pirate Booty

Celery with peanut butter

Popcorn

Berries of all varieties

Potato Chips

Pear slices

 

Dinners:

Fajitas, salad, watermelon

BBQ chicken, corn bread, corn

Dinner out for date night! Woo hoo!

Picnic dinner with friends at the park (I brought watermelon, lemonade, and pudding)

Pizza, salad

Shrimp and Spinach Pasta with cauliflower, Artisan bread

Chili pepper pork chops with warm applesauce (recipe coming soon), grilled potatoes, steamed broccoli, and homemade banana split ice cream (another recipe I’ll post soon!)

Weekly Menu

Since last week was a bit of a rough week, my focus was more on surviving than on making elaborate meals. So, here’s what we ate:

 

Breakfasts: (once I realized what a rough week it was going to be, I started making breakfast breads the night before)

  • Pumpkin bread (I tried a new recipe – I’ll post it soon!)

  • Cereal

  • Eggs and toast

  • Banana bread

  • Rhubarb muffins (because we are starting to get LOTS of rhubarb from my parents’ garden – hooray!!)

  • Coffee cake

Lunches:

  • Bean and cheese burritos, veggies

  • Chicken and Rice Soup, Basil-Garlic Toast squares

  • Pita bread, tabouleh (another recipe I’ll share soon!), hummus, fresh veggie slices

  • Tuna Topped Salad

  • Nachos, pear slices

  • Hotdogs, watermelon, potato chips

 

Snacks:

  • Blackberries!

  • Yogurt and granola

  • Cheetos

  • Bananas

  • Veggie slices and hummus

  • Strawberry-banana smoothies

  • Kettle corn

Dinners:

  • Lasagna, salad

  • Chicken-Basil Sausages, Grilled veggies, French bread

  • Vegetable-Beef Soup, Artisan bread, brownies

  • Leftover Restaurant (twice, actually – I must have made a lot of extra food last week :) )

  • Wine-Glazed Grilled Tilapia, grilled vegetables, Rice pilaf with lentils, salad

  • Steak, Cheesy-Broccoli rice, salad, steamed green beans

  • Strawberry-Spinach Salad

  • Macaroni and cheese

Snacks:

  • Peanuts

  • Popcorn

  • Apple slices

  • Oreos

  • Broiled grapefruit (recipe coming soon; in the meantime here’s a tantalizing picture for you:)

 

Dinners:

  • Herb Crusted Pork Roast, Salad, Artisan Bread (I bought it this time, instead of making it homemade ;) )

  • Wine Glazed Grilled Halibut (recipe coming soon!!), grilled corn and asparagus, Artisan Bread (leftover)

  • Hotdogs – this is what the kids ate while we had the amazing halibut mentioned above!! :)

  • Chicken stirfry, rice

  • Chicken-Apple sausages, french bread, Cranberry-Walnut salad, Strawberry-Brownie Trifle

  • Hamburgers, homemade French fries, green beans, chips and salsa

  • Out to eat with my sister and her boyfriend at a delicious pizza place!

  • Dinner at my brother-in-law’s house (I brought a salad)

Weekly Menu

On Monday we were in  Puerto Rico, so we were eating, well, this:

 

 

But the rest of the week, we were eating this:

  • Homemade pizza, carrot sticks

  • Brats and hotdogs, watermelon, chips and salsa

  • Parmesan pitas, apple slices

  • Popcorn (FINALLY! There was a great sale on popcorn at Safeway this week. I stocked up – 9 boxes! :) )

 

Dinners:

  • Grilled Tilapia, grilled asparagus, naan, watermelon

  • Loaded baked potatoes, grilled corn on the cob, steamed broccoli, ice cream

  • Taco Salad

  • Grilled fajitas, chips and salsa (we used plain homemade yogurt instead of sour cream – you couldn’t tell the difference! :) )

  • Dinner with our Bible study group

  • BBQ chicken, garlic mashed potatoes, grilled veggies with adobo seasoning, Blue Eyed Corn Muffins

  • PBJ, pear slices (prepared by Will and Naomi, because they can cook! :) )

  • Out to eat while car shopping

  • Out to lunch with my mom (we had Greek!)

Snacks:

  • Bananas and peanut butter

  • Cuties

  • Cheez-Its

  • Apples

  • Ice Cream

Grilled Lemon-Pepper Tilapia, Rice and Lentil Pilaf, Green Beans

 

Dinners:

  • Tostadas (this time I did have refried beans on hand, but it did make me think about my totally-on-accident refried bean experiment from last week :) ), carrot sticks, frozen yogurt

  • Chicken Enchiladas, green beans, chocolate chip cookie bars

  • Out to eat with Brian for a wonderful date! (the kids had Ramen and green beans :) )

  • Grilled Lemon-Pepper Tilapia, Rice and Lentil Pilaf, green beans, ice cream

  • Brian saved the day and brought home Subway after a rough day

  • Spaghetti, Vienna Bread, salad

  • Hamburgers and hotdogs (although I did not do homemade buns this time), french fries, carrots and cucumbers
